柠汁腌鱼生（西班牙语：Ceviche；西班牙语发音：[seˈβitʃe]）是一种在拉丁美洲沿海地区的常见食物。这食物一般是使用青柠或柠檬汁，配以多种辣椒属物种调味，用来腌制生鱼片。其他调味配料还有切碎的洋葱、盐或芫荽亦或会加入。腌两个小时就足以杀绝大多数的细菌，但不能杀死寄生虫（通常为线虫，例如：海兽胃线虫）。
