![](/Images/godic/202501/15/Glutathione-3D-vdW3049.png") 谷胱甘肽（英语：Glutathione），又称麸氨基硫，英文简写：GSH，属于三肽，由谷氨酸、半胱氨酸及甘氨酸所构成，其中第一个肽键与普通的肽键不同，是由谷氨酸的γ-羧基与半胱氨酸的氨基组成的，在分子中半胱氨酸巯基是该化合物的主要功能基团。作为动物细胞中的抗氧化剂，存在于充满水的细胞内部，可以保护DNA免于氧化。谷胱甘肽以两种型态存在于人体，一是还原型态、另一是氧化型态。菠菜含有谷胱甘肽。 谷胱甘肽是人体内非常重要的抗氧化物质，但随着年龄增长、生活不规律、饮食习惯不佳等影响而逐渐减少，过去有些人认为口服谷胱甘肽到胃部就会被胃酸及胃蛋白酶分解，就以为口服或肠道灌食 GSH 对提高血液中的GSH浓度的效果不佳。

It is a tripeptide with a gamma peptide linkage between the carboxyl group of the glutamate side-chain and the amine group of cysteine (which is attached by normal peptide linkage to a glycine). |
