蜜饯,也称果脯,台语称之为咸酸甜(kiâm-sng-tiⁿ),是以桃、杏、梨、枣、冬瓜、生姜或果仁等为原料,用糖或蜂蜜腌渍后而加工制成的食品。除了作为小吃或零食直接食用外,蜜饯也可以用来放于蛋糕、饼干等点心上作为点缀。传说果脯是明朝时期的御膳房发明的。

Whole fruit, smaller pieces of fruit, or pieces of peel, are placed in heated sugar syrup, which absorbs the moisture from within the fruit and eventually preserves it. Depending on size and type of fruit, this process of preservation can take from several days to several months. This process allows the fruit to retain its quality for a year. |
