- a type of vegetable that is eaten cooked or in salads. There are two types of Chinese cabbage, one with long light-green leaves and thick white stems that is similar to lettuce and one with darker green leaves and thicker white stems. The first type is usually called ‘Chinese leaves’ in British English and the second type is called ‘pak choi’(BrE) or ‘bok choy’(NAmE).
