In the thesis we mainly discussed the rheology of trigonella foenum graecum gum (dissolved in hot water).

Since Xanthan Gum is easy dissolved in water and stable to heat, and it can generate better performance when used with alcohols, it can increase the stability of the product.
With problems, such as poor dissolved-oxygen caused by the high viscosity of xanthan gum in mind , the present research directions and hotspots of fermentation techniques and reactors are discussed.
