  Moisture, crude protein and crude fat content of Gansu wapiti flesh meatrespectively were 76.31%, 21.92% and 1.47%,the content of dry matter was less thanbeef, pork, chicken and rabbit meat, but it was similar to mutton, camel meat and horsemeat.
