The content ranges of protein, fat, coarse fiber of these boletus were 4.38-5.42 g/100g, 2.47-3.07 g/100g, 1.23-1.56 g/100g, respectively. The content ranges of ion, calcium, zinc were 1.96 -3.80 mg/100g, 14.6 -29.8 mg/100g, 0.65 -0.97 mg/100g, respectively.
从牛肝菌的成分、毒理学的评价以及不同方法处理后的牛肝菌的高效液相色谱(HPLC)图谱三个方面对其安全性和去毒方法进行了研究,获得以下实验结果:1,四种牛肝菌蛋白质的含量范围为4.38~5.42g/100g,脂肪含量范围为2.47~3.07g/100g,粗纤维的含量范围为1.23~1.56g/100g,铁、钙、锌的含量范围分别为1.96~3.80mg/100g、14.6~29.8mg/100g、0.65~0.97mg/100g。
