Harry can summon his Firebolt when he battles the Hungarian Horntail, but he can't transfigure a rock into a flying broom (as Cedric transfigured a rock into a dog).
The Harry Potter books also contain an assortment, such as the Hungarian Horntail that pursued everyone's favorite boy wizard in The Goblet of Fire, but the movie versions don't dwell on them.
